How do you set default values in e.g. the patient editor?
For example, at the moment “patient category” defaults to “insurance” and I’d like to set it to either blank or “private”
but there are other examples.

The PATIENT CATEGORY should default to -NONE-. When you create a new patient record, the list field should be blank until you select a category.
Can you test it by creating a new patient record and checking the CATEGORY field?

It is of course as you say in the hosted version, but on the online diary I get “insurance” and “active” respectively for the fields Category and Patient status.
However, I would also like to be able to change defaults in the full version, particularly the “appointment type” field and maybe one or two others

I didn’t realise that you were referring to the Online Diary. At the moment there isn’t an option to set -NONE- in the admin settings.
I will however pass this onto our development team to have a look into!
